Healthy Banana Bread in a mug

 WARNING: Horribly addicting recipe to follow...


Ok, if you've kept reading, no blaming me for not warning you. I'm pretty pleased with how this recipe turned out with only a couple tweaks. This stuff is seriously good, and an awesome lower carb/calorie alternative for the real stuff.


Don't you just want to sink your teeth into that soft, sweet, guilty-free banana bread?


Mmm, yummy (And for those of you passing out at the sight of that much butter, don't worry, it was solely for photography purposes. I did NOT eat that much.) But, I am unashamed to admit I did eat the bread after the photo shoot.

Calories: 122 per serving
Carbs: 15 per serving

Makes 2 servings

Ingredients
  • 1 Medium Banana, mashed
  • 3 Tbsp coconut flour
  • 1 egg white
  • 1/2 tsp baking powder
  • 1/4 tsp vanilla extract
  • Sweetener to taste
  • Add cinnamon or nutmeg if desired
Directions
Mix all the ingredients together in a small bowl, making sure to taste the batter to make sure it is sweet enough. Grease the inside of a mug and spoon batter into cup, pressing it into the bottom. Microwave for 3 minutes, making sure it is fully cooked (You may have to go longer, microwaves are all different, but texture is very important with this recipe, it needs to be well done.) Using an oven mitt (Mug will be pretty hot!) take the cup out and tip it upside down on a cooling rack, it should slide right out. Let it set uncovered for 30-45 minutes on the cooling rack before digging in! Mom loves this with a slice of cheddar cheese on top. Me, I prefer it with just butter.
